Quinoa Fattoush

For our first dinner in our new home, I was really feeling quinoa for some reason.  I was also looking around the kitchen and realized we had an abundance of fresh produce.  Truly, an amazing part of living in farm country is the produce.  Everything is inexpensive, fresh and delicious!  I decided to throw together a salad inspired by a fattoush salad, and hope for the best.  I used the dressing I always use for a fattoush, and this turned out delicious.  It was a great side dish for our first meal, and the leftovers have been a meal!

DSC01754Dressing:

-1/4 – 1/3 cup EVOO
-juice of 2 lemons
-2 cloves of garlic, grated
-Salt and pepper to taste

Salad:

Quinoa (I cooked 1 cup dry with 2 cups water)
-Veggies of your choosing (I used red onion, vine tomatoes, scallions, and cucumber)

Combine the dressing ingredients in a bowl, grating the garlic right into the bowl.  Add all of your other ingredients and toss to combine.  Let them sit for about a half hour so the flavors meld together.  Season with a little more salt and pepper if desired.

This couldn’t be any more delicious or easier!
